The Prince's Ginger
1 1/2 oz – Dark Rum
2 1/2 oz – fresh pineapple juice
1/2 oz – fresh lemon juice
2-4 – local ginger slices
4 – freshly picked lemon grass sprigs
1/2 oz – sugar syrup
3-4 dashes of Angostura bitters
Directions:

Muddle ginger slices and lemon grass springs in a mixing glass.

Add all remaining ingredients to the muddled mixture.

Add ice then shake vigorously.

Strain into a high ball glass.

Fill with ice.

Garnish with lemongrass
